I remember seeing a story where there was this kid who was just a genius at horse betting, but never placed bets himself. He could guess correctly every time. Then an adult notices this and tries out the kid’s guesses, and he gets money off of it. This goes on for a while, but then when the guy is ready to bet big, the kid stops going to the horse races because he found something better. This was not the main plot or anything, just a flashback or backstory or something. I’m fairly certain it was in a manga, but there’s a chance it wasn’t. Any help is appreciated!

There’s a famous short story by D.H. Lawrence called “The Rocking-Horse Winner,” about a kid who can pick winning horses. It’s not entirely like your description, but probably worth a look.
There was a episode of the Simpsons where Lisa picked out the winners of football teams if that was what you meant

There’s horse racing plots every once in a while in Gintama. Side character Hasegawa (MADAO) often goes to the track and occasionally gets on weird winning strategies like this that blow up in his face in the end.
