Would you be like, “Oh shit!” and try to find another solution? Or do what movies and TV shows does and keep shooting your bullets at him? Which obviously isn’t working.
What if you were at war and the enemy has a guy that bullets bounce off of?

Shoot him with a rocket or hit him with a tactical nuclear weapon
Go after his family and friends
NBC
And no, not the media company.
Boris bullet the bullet dodger
I’d pull a Dr.Strange
Depends on the tactical situation. Shooting him might slow him down enough for your guys to retreat. But you might be in the kind of military where you get executed for retreating, so shooting him is the only thing you can do.
Maybe he’s not bayonet proof, so you can try that when he gets close enough, but by then you’re probably panicking so bad that you no longer have conscious control over your actions. Best hope your fight/flight/freeze instinct picks one that lets you survive.
I’ve never understood this in superhero movies. At least run maybe you would have a chance.
Call in an air strike.
Call in a missile strike.
Bullets okay fine we will just call in an artillery strike and let the force of the blasts and shrapnel do their thing
biological weapons
I’d capture him alive so we can study whatever it is that makes bullets bounce off him.
He has friends who aren’t bulletproof.
If you hit a rock with a hammer and it doesn’t break in one hit, would you first keep hitting it to see if maybe multiple blows or a stronger blow or hitting a weak point or from the right angle might break it, before deciding it’s 100% invulnerable and looking for another solution that will require tools you don’t already have?
Park a tank on him and leave it there for the duration.
I’m not hearing anything about alternative methods
A guy. One guy. I will probably never meet him and in war you can die from a lot more things than bullets.
For the higher ups, capture him and try to reverse engineer his body armor, otherwise ignore him.
Trap and restrain. One man is no army.
Aim for the mouth. Or the butt

It is like the argument of what good is an ar-15 against a tank. Yes, you aren’t going to penetrate the armor of a tank. But a tank needs gas. The crew needs food. Somewhere to sleep. Repairs have to be made somewhere. Where does its spare parts come from and how do they get there?
There is always a way to immobilize something “impenetrable” if you elect not to fight it head-on
