How did we “rediscover” antiseptics with Joseph Lister?

So, to my understanding, medieval surgeons and such were using honey and rose water among other things as antiseptics for wound healing. We still use honey today as an antiseptics to heal wounds. So how did we “lose” the idea that honey and rose water were antiseptics then? It seems odd that from a period of time from some point after the medieval era to the point of Joseph Lister that we stopped using honey even though it’s an effective antiseptic a lot of medical facilities are using today (I work as a medical professional).

There’s other things as well, we were using things like alcohol as an antiseptic as well, but somehow either alcohol and honey became ineffective and fell out of use or we lost that information I assume?
