Because it’s theoretically one “dish” that you order at the restaurant, and you can choose to customize it however you want afterwards.
If the above doesn’t work, I could probably nitpick it further by saying my hotpot order is “hotpot with a Szechuan mushroom miso broth with five of everything on the menu (of the specific place I like)” and just opt not to finish everything every day if I don’t want to, right?
Even with only water forever (I’d only lose tea and the occasional beer or mixed drink which kind of sucks but I’d ultimately be ok with it) I could probably live with an endlessly customizable selection of hotpot.

Ok so I really like the liquid nacho cheeses that they have at like movie theaters and stuff, and Tostitos makes both a normal yellow and a queso Blanco liquid cheese dip. When we make nachos I’ll combine the two cheeses and then throw some ground beef or turkey seasoned with taco seasoning in with the cheese mixture. Ladel some of that on top of nacho cheese flavored Doritos and then top with salsa, sour cream, and guacamole. The others in my household also do Refried beans but those make my tummy hurt so I avoid them.
Ruben sandwich. On the deli swirl rye, corned beef, Saurkraut, pickle, a little onion cooked with the Saurkraut and a rich of garlic, extra cheese, Swiss or Provolone, or both. Thousand island dressing.
