For some reason in elementary school the thought of bread (which I never even tried) sounded disgusting but I realized how good it was when I finally tried it in high school. I few weeks back I made a homemade loaf and I easily could’ve had the entire thing.
Beans, olives, mushrooms. A fair chunk of vegetables because I grew up in the US South and the general way of cooking them is to cook them into fucking oblivion.
Mushrooms! There were several incidents of tainted canned mushrooms when I was young, that made a lot of people sick. I somehow heard about it and I concluded that ALL mushrooms would make you sick and wouldn’t eat them for years!
In order of how much I hated it then + how much I enjoy it now:
Olives
Mustard
Pickles
(I never really hated pickles, I just wasn’t a big fan. Now I love ’em, but not as much as I adore olives, which I really, really disliked until I was a teenager)
None, growing up my family nick named me “the human garbage disposal” a misnomer I’ve come to hate as an adult but it’s not inaccurate I would and will eat just about anything.
Red beets. Man, I hate them as a kid, and most of my adult life. Then, I had a red beet and goat cheese salad that was game-changing for me. I’m a huge fan now!
My mom would always steam or boil them. They were mushy and had no flavor. She was also against the use of salt or butter. I still have a visceral reaction to steamed broccoli.
But roasting veggies? Holy shit. Toss some seasoning on it, some olive oil. Delicious. Took me until adulthood to discover this.
Hot dogs. My mother bought those “wieners” that are absolutely disgusting. My first all beef hot dog made me realize the world wasn’t insane. A hot dog can be tasty.
Basically any meat. My parents would always overcook meat for fear of undercooking it. So I always hated meat. Especially steak as it was always served like a chunk of leather.
Peas, but that’s because I never had fresh or frozen peas as a kid, only the canned ones. Once I was able to start buying my own groceries, a LOT changed for me.
I always wanted to like them when I was a kid and even well into adulthood. They just looked tasty and I love so many different foods that I was surprised that olives were one of the things I absolutely hated. I kept trying them every couple years though.

“God, these are awful, why would I ever do this to myself??”
“Actually, these aren’t quite as bad as I thought.”
Steak. Once I had an actual medium temperature vs what my dad calls a medium temperature, it was like going from a black and white picture to a technicolor one.
A heck of a lot. I was a fussy eater as a kid, I was fed a lot of pasta and butter. At some point in my teens, I switched up, and I could eat foods that I used to think tasted disgusting.
Onions I hated the crunch so bad it would ruin a meal. But now I love them and they make a lot of meals way better like chili or posole and even burgers
I really didn’t like any food to touch but as an adult, some food touching or mixing is fucking delicious like turkey and cranberry sauce. I also absolutely hated dressing. I loved my granny, she was a great cook but she made dressing like she was preparing for an army it was somehow very wet and very dry at the same time. My dad loved dressing so anything he loved, we had to love, too so he would overload my plate with dressing that I hated and I had to eat it or else I couldn’t get another plate of anything else and definitely couldn’t get dessert. My mom’s dressing and gravy, though? Damn good shit. My sister in law also introduced me to Thanksgiving leftover egg rolls. I put mashed potatoes, turkey, dressing and provolone cheese in mine and dip them in my mom’s gravy and it is Devin. SIL eats hers with raspberry jam like a Monte Cristo. I think they would be fabulous with cranberry sauce
