I’ve heard a lot of ‘jokes’ about how gluten free people are liberals, leftists etc. why are the two associated with each other? I don’t feel like I’ve really heard the same statements regarding any other allergy or food intolerance. I’ve never heard anything about “those conservatives and their lactose intolerance” but I see a lot of jokes about libs being gluten free. I don’t really understand why having celiac disease (a genetic autoimmune disease that requires lifelong adherence to a gf diet) or a food intolerance is associated with a political stance.

Because somehow science and medicine is now seen as “liberal”. Its honestly ridiculous. People who think like this are idiots and not worth anyone’s time.
Probably because being GF is associated with being more New Age or hippie and that group of people tend to be more liberal.
But it’s not true. There are health wackadoos on both side of the aisle.

For a long time, being super health-conscious (as well as being into naturopathy and other alternative medicine) was a hippy- and lefty-coded thing. The stereotype is that you would have to be some combination of highly educated and open to new experiences to involve yourself in such things.
This is changing now that antivax sentiment is becoming conservative-coded.
Counter question why are people using a ivermectin mostly conservative? Because they dislike science, and do not trust doctors. So, their only path is to deworm themselves.
Being “crunchy” and/or believing in science are associated with being liberal.
Conservatives tend not to believe in climate change, vaccines, the existence of life in other galaxies, etc. Liberals are associated with being “fussy” (wanting a gluten-free, dairy-free, Red 40-free, etc latte).
Each side pokes fun at each other for their beliefs, including something as scientifically proven as celiac disease.
It’s not. Keep in mind these insults started before the right got caught up in wellness conspiracy theories and anti-science, and it was mostly to emasculate men (soy boys – real men drink milk!) while commenting on seemingly ridiculous wellness trends. It’s like soy milk and gluten free are seen as a modern counter culture. Only useless, bludging hippies eat gluten free!
They don’t know that people eat gluten free for medical reasons. And if they do (which will only happen if they or a close loved one is diagnosed) they’ll probably blame it on chemtrails.
The real reason is that gluten free is for 2 types of people, those who physically can’t have it without getting sick, and those who choose it as a fad diet. The fad dieters are associated with liberalism, not saying it’s correct but that’s the reason.
I knew someone who was gluten intolerant and not a liberal
Some people are gluten-free by choice. I think the intent of people who mock gluten-free people is to specifically mock those who do so by choice. Unfortunately, there are also a lot of people who think intolerances and allergies are psychological and not physiological, and the Venn diagram between the two groups isn’t that far from being a circle from my experience. Many people who eschew gluten as a trendy diet fad rather than a medical limitation tend to have some misgivings about what gluten actually is and what products contain gluten. Also interesting to me is that it seems to be reviled by male conservatives, but celebrated by female conservatives, especially “crunchy moms.” But this would be based on social media which is a bit of a hyperreality anyway, so I doubt the more extreme opinions for or against living sans gluten are actually as prevalent as they’re made to seem, and in the real world, most people likely don’t give a shit whether or not someone else eats gluten or why.
