you can use a vpn like protonvpn (subscription required but well worth it IMO) or whatever else. I think firefox comes with a built-in vpn these days
Can someone spy in that way. Yes. Yet beyond the privacy warning. What else tells you they are?
and just to add, browsing in private mode in your browser won’t change a thing, the router still knows what sites you’re visiting. It just doesn’t keep browsing history on your device
No privacy mode just stop local info from being stored. IE what website you were at and when. Admins and IP services can still see everything you search and look at if they want.
You sadly can’t really stop them since it’s a private service of theirs you use. You could get, against any advice I’ve ever given, one of those T-Mobile setups where it’s basically a hotspot modem you put in the window and runs off cell signal. It would then be private and your own.
Using a VPN would mask your online identity but they could have it set up to stop all vpn use on their network like most businesses do now.
I would not be logging into anything person from their connection in the current state

I would recommend trialing different vpn services until you find one that you like and works for you
You can always use a virtual machine. That’ll decrease your memory and speed since it partitions part of your real computer to work and doesn’t use all it’s available capabilities. The VM will pull internet from your computer like it is on a LAN port and have it’s own IP/ MAC address independent of your real computer. In essence your computer is hotspotting to your new virtual computer.
You don’t have to use the provided internet. You can easily go to your phone provider now and just get internet and it’s relatively cheap.
VPN is great for this. I’ve heard cloudlfare DNS also encrypts queries but I’m not sure if it helps in this situation. Won’t hurt to try as it is free.
But a VPN is highly recommended.
A dedicated VPN service is the best option. Other than that, you could download & use the Tor browser.
Good VPN 7-eyes or more compatible charge more than a 4G sim card … only cheap VPN will do in your case

Use a VPN or get your own service. You are getting your service for free. If you want free you’ve got to play by their rules. Your LL is open to so much liability for what their tenants do on their connection. I’m not surprised they are doing this.

My understanding of a VPN if someone can see the activity, they just don’t know who it is. The VPN masks the users ID.
Why would you use their service?
when I rented WIFI router was treated like facility in the apartment. I had access to it, so if I suspected this I would probably factory restore the router and change the default password, then change the password back to what it was before moving out. if landlord immediately comes to your door / calls you, you know he knows, and can innocently question him if he knows if there is something special about the network. (if he is spying, he will probably get angry and lie to make up an explanation, you can claim to be worried the previous tenant had installed spyware on the router / network, and this might spook him/her/them)

He wont be able to see what you are doing.
They can see the IP addresses you visit with the router. They cannot see, messages inside any apps that use encryption (Signal, whatsapp, etc). They cannot see encrypted content of websites you visited. At most they will know what site you visited, not what you’ve done there.
VPN: This will show all of your traffic as going to the location of your VPN provider, your VPN provider will be able to see which sites/addresses you’re actually visiting.
