Mozzarella mutes the flavor of the sauce and the toppings far too much. You lose a lot of the spicy, tangy, and subtle flavors of a good sauce. A pizza with a good sauce is always wasted by adding cheese. I will say that some light parmesan is perfectly acceptable to enhance the flavor of the sauce instead of masking it.

For years I’ve been going light or no cheese. Maybe if an alternative like a bit of ricotta or feta is available I’ll get thet but no mozerella especially with how much places put on sometimes.
I disagree about it being superior, but I will say it’s a lot better than I expected. Have a friend who is lactose intolerant who ordered one and then offered me a slice (ran into him unexpectedly). The sauce and meats are actually accentuated with the lack of cheese and it was pretty good. Still not as good as with cheese though…

There’s a few bakeries near me that serve foccacia with sauce and no cheese and it’s really good, but I don’t really agree with you. I think this fails the Miller Test of pizza, just that, the average person would think that cheese is INTEGRAL to a pizza.

I can sort of see low-fat cheese covering up the other flavors, but in my opinion if you’re using whole milk cheese the added grease actually adds to the other ingredients, at the expense of being less healthy.
