last night i had very crisp romaine lettuce pieces with spoonfuls of an olive/caper/pimento mix. it was divine!! will definitely be served at a dinner party in the future lol. so that. and most of my snack plates bc they’re always pretty and satisfying
I use 0% fat Greek yogurt and make a huge batch of ranch dip. Add chips, roasted veg, baby carrots, hard-boiled eggs. Etc. add buffalo sauce or BBQ to mix it up. I’m in a calorie deficit right now so weird things slap and this is one of them.
Just jumping on to beg someone to explain to me what girl dinner is, because I do not understand it. Google just shows me regular easy dinners and snacks.. what gives?

raw button mushrooms sliced, with a little bit of aosa seaweed soy sauce, and a little bit of olive oil. made by accident because i was too lazy to prepare something for more than 2 minutes and it blew my mind. i call it “umami salad” now and make it super often
I throw a bunch of veggies with a scoop of hummus, and some Babybel cheeses into a tupperware every day for lunch. Extra points if I have some deli meat and grapes, and it turns into an easy charcuterie platter.
I travel for work a lot and have to eat a lot of solo meals. Often, I sit at the bar of nice restaurant and order a salad, a side of fries, and a cocktail, and then read a book on my phone.
My week day second breakfast is what I have for weekend girl dinners sometimes and I’m very proud of it. Raw veggies and hummus. Black olives and pickled beets. Cheese cubes, lunch meat roll ups and a hard boiled egg. Then add some fruit.
I often est sweet yum yum pickles from the jar, any cheese that I have on hand, corn chips, the stonewall kitchen hot pepper and peach jam and a handful of baby spinach for fibers lmao.
My favorite is Lemon butter pasta. Boil pasta, turn heat down to low, add in butter, fresh squeezed lemon, a little garlic powder, salt and fresh shredded Parmesan. Amazing.
Brie cheese, throw some sugar on the top and broil it for a good 10-20 min. And during that time I’m toasting some bread and once that brie is out it doesn’t stand a chance
Otherwise I’m just eating the brie straight up on toasted bread. There are days that I can’t wait for the brie to melt, I want to eat it now

Cheese and veggie platter: couple of hard cheeses, maybe goat cheese, crackers, radishes, carrot sticks, pickles.
Saltines with vienna sausages and mustard. (When I was in college, my mom sent me a care package of snacks she ate when she was in college, including vienna sausages and mustard and I…had actually never had that growing up, so that was weird, but yay, processed meats.)
Two boiled eggs, one or two packets of instant noodles with or without cheese, a sprinkle of sesame seeds and some chopped green onions and a side of cucumbers with lettuce drizzled with ranch or mayonnaise with some Italian seasoning, garlic powder and little bit of salt. Preferably with a small bottle of Gatorade to drink.
Cold leftovers chopped up with greens to form a salad. This could include pasta, potatoes, beans, peas, corn, carrots, chicken, rice, cheese, tofu. Just whatever is in the fridge plus greens plus a little dressing. Then ice cream for dessert. Whenever I’m alone in my house I seem to default to salad and ice cream.
Basically do myself a charcuterie plate if I can’t be bothered to cook. If I can then a quick pan fried piece of salmon with sweet chilli sauce and salad with roasted pepper (air fryer style so it’s quicker!)
Rotisserie chicken from Costco, instant madras lentils from a pouch, and a can of tomato. Add garlic and whatever you like, and simmer in a pan for a couple minutes (it just needs to get hot).
I stand in front of the (open) fridge, take a largish block of cheese in one hand, a knife in the other, and cut small bites off, one at a time. One for me, one for doggo. One for me, one for doggo. It’s our special bonding time.

I took a bag ot frozen broccoli, microwaved it, sprinkled cheddar cheese, shook the bag, and then ate it out of the bag. With salt and pepper because I have taste.
I’ll put some marshmallows and chocolate in the are fryer for a 4 minutes and use my graham cracker to scoop like a dip and enjoy that with a glass of wine

My father died the year after I went through a divorce. So both of those things are awful, but the real blessing is that I get to spend most weekends doing girl dinner with my mother, who as I’m sure you all can assume is the original source for all my weird idiosyncratic food behaviors.
Last time, we drove to the supermarket at 6PM, so that we could have a dinner that included an entire sheet pan of roasted brussels sprouts, half a shrimp cocktail, and an entire tin of low cal mint chocolate chip meringue cookies.
She can never remember the right words for things, so she always calls it “ladies supper” which sounds less like single millennials on TikTok, and more like fancy night at the women’s prison.
Can we agree that it doesn’t qualify if you have to turn the stove on? Seeing a lot of “pasta” answers and that isn’t girl dinner (imo), that’s just dinner.

I throw two frozen hashbrown patties in the oven, then I cook two or three over medium eggs.

Ceasar salad wrap. Take a ceasar salad, put it in a wrap with some leftover chicken or air fryer chicken. Love it. Quick and makes it feel healthy.

Salmon still frozen. Put it in the air fryer pour sesame oil, salt and pepper on top. Cook for 12 minutes. Top with yum yum sauce.
