When the meat slices are not “flowered” or arranged up to allow for more air flow; when you just put slices of meat stacked up in your sub like sheets of paper – it’s the WORST! You don’t get a full flavor profile, AND you will likely have ALL of your meat fall out of the sandwich when you take a bite – it just slides right through your grip. Awful!!
I hate when the ingredients aren’t evenly distributed. Or when there’s a huge chunk of meat and barely anything else. I want a nice thin layer of each ingredient in each bite. I always take my sandwiches apart to redistribute everything before I can eat it.
Too much meat! Please don’t give me an inch of sliced deli meats to justify charging more. I’ll take most of it off and feel guilty about the waste (money and meat.)
You can have really expensive, nice charcuterie or some cheap, basic deli meat. Either can still be tasty if done right.
There’s an assortment of sauces and fillings, but that is all based on personal taste and doesn’t necessarily “ruin” a sandwich.
But EVERYONE can agree – bad bread ruins a sandwich!
There’s this sandwich shop here locally with great fillings and flavors. They get a really soft, airy, hoagie style bread for their sandwiches. When it’s a cold sandwich, it’s too thick and too dry. The bread to fillings ratio is wrecked. For hot sandwiches, they use a panini press. The bread is so airy and soft, it just smooshes flat. The worst part is that it doesn’t really get crispy. So now you just have a flat, soggy, soft sandwich. It blows.
It’s the same when you get those really high hydration sourdough bread slices from artisanal sandwich shops, and they slice it too thick and toast it. Like, yes, the sourdough is fantastic and rustic, but it is shredding the roof of my mouth to eat this damn sandwich. Yeeeesh.
Way too much mustard for no good reason. I want to taste the rest of the sandwich, not just mustard. If the bread is sliding around due to the amount of mustard, it’s far too much.

I had an Italian cold meats sandwich (salami, mortadella, prosciutto) from a new place that opened up and it had wayy too lettuce.
