TIFU by being too creative when making butter chicken

My wife just got back to work after 1 year break. During her break she cooked a lot and made amazing food. When she finally found a job, she said that she won’t be able to cook that much. I feel challenged and decided to cook something as she keeps saying that I don’t cook well. I decided to cook butter chicken for us.

I prepped the chicken nicely, marinate with correct ingredients, let it marinate for 1 day. Cooking day come, and I decided to pound the ingredients for the sauce with our small wooden pestle and mortar. Which doesn’t pound everything nicely. There are chunks of ginger and corriander when I finish pounding.

I started cooking the chicken and the sauce. It was good even with chunks of ingredients. But when i finish cooking and taste it i was thinking that it was not spicy enough. Out of all ingredients that i see to make it spicy, one ingredient stood out to me. The szechuan pepper. Yep, i decided to just pour some szechuan pepper to the butter chicken. It changed the taste, there is extra tingling sensation which is interesting for me, and I like it.

My wife was excited and tasted it. Her face changed after tasting it…. She hates it… She said it’s like having a russian roulette with every bite, not knowing if she will get chunks of corriander, ginger, or the szechuan pepper. The tingling sensation ruins everything she said. She said that food usually makes her happy, but this one, it made her frustrated and angry.

I used 2 kgs of chicken and had a lot for the week. During that week, my wife never work from home (eventhough she usually wfh whole week) and keeps on finding excuse to have lunch and dinner in office.

TL;DR: I added szechuan pepper in butter chicken that i made and drive my wife away from home as she HATES it. I still like the butter chicken 🤣

    My ex used to do stuff like this and it was one of the things that made me eventually leave him. I’d ask for tikka masala and he would get Rogan Josh. I’d ask for orange juice and he would get grapefruit juice. In his mind it didn’t matter, he was still getting curry and juice. But I’d drove me mad he couldn’t just follow basic instructions and do what I asked.

    I know this is a funny one off event to you but don’t make a habit of it. You are old enough to be married so you are old enough to learn to cook basic meals to take the load off your wife.

    I make the best butter chicken. Cut chicken into cubes and fry. Season with Kinders buttery garlic seasoning. Pour in 1 bottle of VH butter chicken sauce and 1/2 cup of whipping cream. Simmer. Make 2 cups of minute rice. Throw into butter chicken and mix. Done.

    If you already knew you “don’t cook well” what gave you the confidence to add a random ingredient on a whim? And by the way, for a beginner “cooking well” is literally just following directions. Even if you don’t know what a particular instruction means you have the internet at your fingertips. Even if you don’t have a specific ingredient (which if you took the effort to plan ahead you would) you can google appropriate substitutions. This doesn’t feel like a “today” fuckup it sort of feels like ongoing weaponized incompetence.

    I’m not sure this is “being too creative” as much as it is fucking up a recipe.

    They didn’t dislike it because it wasn’t “traditional”, they didn’t like it because it was bad and confusingly made. Take some ownership of that and think about how you could have done that differently

    Is this what they call weaponized incompetence or just plain stupidity? You’re forcing her to eat out instead of fixing the food and make a new one. If you think that’s funny and keep trying to do that, it’s going to be one of the grounds for divorce soon.

    this is the one i use! super simple but you might need to let it simmer for longer to get it to reduce.
    mistakes happen. it’s sweet that you tried. you have to mess up occasionally to become a better cook. one time i used lime juice as a substitute for lemon… rough but it was just for myself.

    Why don’t you take a cooking class and learn basic techniques? Somo stuff needs to be done the way it’s been determined to be the best after decades and centuries of trial and error. Would you want your surgeon being “creative?”

    In case you’re actually wanting to improve your cooking OP, in future don’t use the mortar and pestel just finely dice the ingredients until they’re a fine, almost paste-like consistency. It’ll take a little longer but you’ll get better results.

    And when making a dish from a specific culture/country, try not to add in spices/herbs from completely different cuisines/countries because they’ll usually always have vastly different flavour profiles.

    You should have just added regular chilli powder/chilli flakes to your dish. Ah well, next time do better.

    I cook a lot, I’m pretty sure Szechuan peppercorn can work in butter chicken. But definitely not if you’re a beginner and don’t know what you’re doing

    I’ve made butter chicken a few times and the last step is to always put the gravy into the blender. Not a pestle. No chunks of anything other than chicken in the end product.

    If you are in the US, the Kitchens of India Butter Chicken paste works pretty well. Sub the water with yogurt and canned coconut milk. It’s a super simple alternative.

    That is not a traditional spice for butter chicken. I’ve never heard of, nor would have considered, using it as a substitute for something else.
