I was caught shoplifting at Nordstroms 12 years ago, I’m happy I was finally caught, I had a problem and had stolen probably a grand from the mall at that point, never stole again after that.
They sent me a civil demand letter wanting around 500 bucks, I never paid it, they called and called me, I stopped answering, they kept sending letters, then they eventually stopped contacting me after a couple years. The lady on the phone at one point said it’s in collections, but I don’t think it is because I was later contacted about medical bill in collections, parents had forgotten to pay it, and didn’t seem I had any other collections.
Can this ever come back to haunt me since I never paid their civil demand?

When you say you were caught, what happened? Was the police called, were you arrested? If not and there were no criminal proceedings at the time, you’re clear on that front.
As for the civil side of things, it’s very unlikely Nordstrom or the debt collector would bother pursuing a $500 debt 12 years later.
Is there something you’re worried about on particular, like going to a Nordstrom store?
