I don’t get the hype about american cheese on burger. Any show on youtube that makes burgers states that for a burger you need to use american cheese. Even friends stand by this. Why? Because it melts good. But that cheese lacks any falvor. A slice of cheddar, swiss or emental melts pretty good too and has a superior flavor compared to the american. Heck, even an emental or gouda has a better flavor than the american. I once made a burger with grated parm on it and the feeling of having cheese in the burger was the same (could not tell if there was cheese or not by the texture, just like with america ), but the taste was a blast (whether parm gives a good flavor to the burger or not is debatable, but this post is not about that). So yeah, for me american cheese on a burger is nothing but a tasteless yellow liquid on the top of my patty that brings nothing to the table flavorwise.

I used to be a cheese purist contrarian bitching about American cheese on burgers. I was wrong. The flavor is very complimentary — it’s subtly salty. But the mouthfeel and visual appearance are also important.
The best burgers allow the meat and cooking to shine through. While there’s a time for a bleu cheese or sharp cheddar, having a strong cheese is hardly the best default. Perfectly seared beef with salt and pepper only makes a pretty perfect burger.
I agree with you. Cheddar is my favorite cheese on the burger. The flavor is more natural, the American cheese tastes too much like plastic

When I get the deluxe American cheese it melts real nice and has a lil flavor, but I usually end up using American and something else.
This is definitely an unpopular opinion but I think you may just be making your burgers with meat that’s too low in fat. That is to say, buy the cheaper stuff.
A 70/30 mix makes for a better burger. Greasy is the goal and American cheese is what makes the greasiness palatable. It kinda offsets it with a different grease.
Even better if you seasoned the grill with pork lard or spam.

Plastic cheese is the best cheese for a burger. The shape and size, the oozy softness when hot, the weird fake taste that goes well with burger meats. The question mark over your health afterwards. I’m a plastic cheese snob.
Your mistake is going on YouTube for cooking. It’s not that it’s bad. It’s fine. But I doubt any good restaurants use it. They probably use cheddar which in my experience melts just as well but has more flavor.
