How much do you care?
I have seen some LinkedIn posts written by British people complaining about job applications in American English. To be honest, I am not from either of the countries so I just use a mix of the two. It’s just my preference. Lol, I use Z instead of S. I feel like S seems to be more old school. During my master’s degree, no one was pedantic about it but at the same time, I wonder what others’ thoughts were on this.

I prefer British conventions such as S instead of Z or “ou” instead of “o”. It is more classical, which I think suits academia. Also, it proves that I don’t use AI for my writing.
I would say the most important thing is to pick one and be consistent. Choose the one you’re better at.
If I were applying to something (including submitting manuscripts for publication) I would try to match the dialect or variant of whatever I’m applying to.
But if I’m receiving a application or just correspondence, I wouldn’t be judgemental or really care what others use. Mixing conventions without a good reason is a bit weird though and the writing can come across unnatural.
