My girlfriend’s grandmother died last week and I’ve been here to take care of her. Overall she’s been on the phone nonstop with family and I haven’t seen much from her.
About two weeks ago, I had a plan to buy a car across the country but didn’t get an exact date.
Long story short I got a date today but the seller is going on vacation so I booked a flight for tomorrow and will be back in a week.
I told my girlfriend and she flipped out on me saying I don’t care, and even removed our photo from her phone.
TL;DR am I a jerk for making this trip a week after her grandmother died?

You aren’t a jerk. I am not saying that she should be over the loss of her grandmother, but she did know about this in advance. Maybe offer to call her every night while you’re there to make her feel supported and pick her out a thoughtful gift on the way back? Make her feel seen.
Also, she’s 28 and removed your photo from her phone when she got mad at you? I thought that stopped in like high school.
