Even in the early 80’s ice used to be slippery. Play Mario Bros. and see what happens when the platform freezes over, you’re sliding all over the place and you can’t jump until you get some traction
But technology seems to have gone backwards since then. Play an ice level in Mario Kart these days and it’s just like driving on asphalt

Most people hated the slippery levels, it’s really that simple.
Marketing people probably think mass audiences don’t want frustrating challenges that you’ll feel great about finally conquering: but a steady shot of dopamine.

It’s just that the Karts in Mario Kart got extremely advanced, traction-oriented tires. Those azure rollers are something else!
Even more controversial: Escort missions are great. Protecting things is fun and its a cool way to change up otherwise all offensive gameplay.
Every ice level should also be an escort mission. And you can’t save or pause mid level. And there’s invisible walls blocking interesting looking things. And waterfalls with no treasure behind them. Sounds super fun

I agree, it’s just a matter of level design (I think designing ice sections to be more about reward than punishment is generally a good idea).
Play some Trackmania thats got some really good ice.

On a tangent. When the WRC (rally cars) go to Sweden for a winner rally the tires have such big spikes and tread that they have better grip than they do on gravel and in some cases tarmac.
Games are more casual focused now.
I actually agree, but they aren’t hard like they used to be because a casual can and will either refund your game or just play something else in their 100+ game library.
