I mean, it’s not like they are hiding them or anything, multiple people see their inventions and i assume at least some of these people have a regular contact with their mom. You might argue that they don’t know that phineas and ferb are the ones behind it, but i think they also never tried to hide their presence from the public.

They did! Candace did daily. Mom saw every “rollercoaster”, “castle”, “beach” and “spaceship” they built, every day. Why should she believe any tall tale coming from a stranger, if she already disregards the same from her own daughter?
They have! Well, most people don’t, because the adults in this world are very lax, but there have been people telling Linda.
The thing is though, if they go up to Linda and say “Hey your kids are building a rollercoaster!” or something, she assumes one of three things:
They were put up to it by Candace. Candace is very obsessed with busting them and tries to do so literally every single day.
They were playing along with the kids and their vivid imagination. Even more so if the person is a child.
They’re over exaggerating. If they say “Giant rollercoaster”, she assumes “Box on a little slide”, etc..
It is genuinely so ridiculous (and she’s so used to Candace trying to convince her) that she would absolutely never assume that it was true unless she literally saw it with her own eyes.
And even if she does believe it and goes to look, canonically, no one ever shows her. I remember there was an episode about a reporter coming to their house and trying to record them building their ridiculous stuff. She tries to show Linda, only for the recording and the invention to disappear as usual.
Outside of like two episodes (which I’m fairly sure involve time travel) and Candice dreaming, there is genuinely a force of nature ensuring that they never get caught.
If I told a random woman that her children were building a spaceship to the moon, would she believe me? I doubt that most people would think you were serious.
The big factor is that Linda downplays everything she hears. The handful of times she actually went to check on the boys, their project had disappeared or been destroyed to the point where the remnants looked like completely mundane children projects. Therefore she assumes this is the case everytime.
When somebody tells her “Your boys made a monster truck rally!” she thinks the speaker is referring to matchbox cars in a sandbox. And because everyone in the world is totally chill with what the boys do, they completely miss that her unamused reaction means she misunderstood, and so they do not care to stress how literal they were being.
Canonically, they are super lucky so there is never any hard evidence.
Then all the claims are nonsense. “Mom, Phineas and Ferb built a roller coaster that went all over town!” No one would believe that.
