That’s about it. Pickles are generally only used as toppings or ingredients in a sandwich, and pickled onions are just better in that context. Half the time when you have pickles on a burger you bite into it, get a small chunk of pickle, pull the whole pickle and a bunch of the other toppings out, and get a very unbalanced and messy bite. They also just taste better in a sandwich. Still love a nice dill pickle as a snack but humanity made a wrong turn when they decided that cucumbers were the default sandwich pickle.

Pickled red onions are amazing. I always have a jar around and add it to everything to give it some acidity and balance.

1,000% agree. I hate pickles (cucumber pickles, specifically, though not a fan of raddishes in any form either), and would love pickled onions over cucumbers any day. I used to make my own for tacos or whatever.Â

It’s not too late. Just start casually asking for pickled onions everywhere you go, delis, food trucks, PTA meetings. Make it your thing. Tell people it’s the future of sandwiches. That’s how movements start, right? One strong voice, one tangy crunch at a time. A hundred years from now, when pickled onion is the default, some food historians inevitably trace it back to you. The cucumber, of course, will retire gracefully to the charcuterie board, unbothered, still smug.
