Questions about who would prevail in a conflict/competition (not just combat) fit better on r/whowouldwin. Questions about very open-ended hypotheticals fit better on r/whatiffiction.
I don’t think so. For one thing, if anyone else willing to fight was left, Sans probably would have left it to them. It took being the literal last hope of anyone stopping the human for him to FINALLY commit to giving it his all. Undyne was the hero. Sans is a panicking nihilist realizing, at the last possible second, that he can’t wait for anyone else to do it because he’s all that’s left. If Asgore had absorbed the SOULs, or Napstablook had camped in the Judgement Hall waiting to stop Frisk, or if anyone else was willing to make a last stand, he’d have left it to them.
Another point: we don’t enter the last prompt to attack Sans. It appears to be Chara who does. If a different scenario had unfolded, Chara would have responded in a different way–perhaps managing to OHKO Sans’ backup, or distracting them somehow.
