Hang red Christmas baubles on them as soon as the plants are strong enough to hold them. Animals will learn that the red orbs aren’t edible by the time that your tomatoes turn red.

I recommend getting over the aversion to snap traps. The world has plenty of mice, they won’t be missed.

Get a cat, no poison.
Don’t keep the tomatoes where mice can get to them.

Plant peppers in between your tomatoes
It will make the tomatoes hot
You could start with a stern lecture
If you don’t want to kill the mice. Try enclosing the tomatoes.
