Grilled, Greek style lemon garlic chicken diced, feta, tomato, tzatziki, lettuce, red onion and balsamic glaze on warm homemade pitas. So easy, quick and delish. Hits all the boxes, savory, salty, sweet, herby, creamy, crunchy, saucy. Bonus: Not a huge mess or overly expensive.
Salmon or tuna steak rice bowl. Always rice, fish and pak choy (I looove Chinese vegetables), sometimes if I’m feeling fancy i’ll add a poached egg. These days I keep it simple but i’ve been known to add all sorts of things like pickled ginger, homemade pickled red onions, avocado, roe, seaweed salad, kimchi, edamame, nori, chilli crisp, wasabi mayo, carrot etc. It’s so versatile.
I make my own teriyaki sauce and drizzle it on top (equal parts sake, mirin, and soy sauce with a little sugar to taste)
A loaded sweet potato. I usually add some ground beef, cheese, onions, green onions, avocado, sour cream. It’s quick to make if u prep the sweet potatoes and the ground beef ahead of time
Taco night! It’s very easy and quick for my husband and I do make beans, guacamole, rice, pico de gallo, and some corn and fajitas. We get it done in like 20 minutes or less.
I love getting a few Reds frozen burritos and putting them in a pan with enchilada sauce and cheese and putting it in the oven! Then I top with lettuce, onions and tomatoes. Quick and high in protein
Leftovers/fend-for-yourself night. Its my fave because it’s easy…the family can dig through the fridge or pantry and if they can’t find something, that’s their own fault.

Steak. It takes ten minutes to cook a steak and steam some broccoli. I could easily eat it every night.
Stir-fry with chicken and whatever veggies I have on hand. It’s healthy, delicious, and I can have it on the table in about 30 minutes.
Spaghetti with meat sauce. It’s some kind of comfort food from childhood and also super easy to make.
Plantbased lasagna soup – quick, easy and incredibly tasty.
Or Zürcher Geschnetzeltes with soy chunks, mushrooms and a side of rice.

Thai mushroom noodle soup. My mom makes it with a lot of coconut milk, some lemongrass, chicken, corn and mushroom and it’s so creamy
