What would you do with this room?

I have a room in my house that, at one time, used to be a gazebo style addition in the early 1900’s. Somewhere along the line they decided to wall it off and make it into a room, I’m running off the fact that the windows in the room are huge and seem to be original to the house.

Every summer it’s 10 degrees warmer in there and every winter it’s 10 degrees colder in there than the rest of the house. I’ve looked into insulating that room but no one wants to touch it because of the horse hair insulation that’s original to the house. wtf.

I’ve given up making it an actual living area, what plants can I grow in there?

    If you get light in there, get bulb plants that you can cut down every fall/winter when they die, and usually not have to water either, and that will come back up in the spring and through the summer when you start watering again. Alternately and/or additionally, plant herbs and onions and other plants you can cook with. I don’t know where you live but if it’s warm enough in the winter they can stay growing all year long as long as you water them, and watering is really easy, it doesn’t have to be by hand, you can put planters with a watering hose running through all of them ¯_(ツ)_/¯
