    There are a few restaurants that have them but finding one that’s done right is HARD – in fact I’ve never seen one be done good. ☝️

    1. Carbonara with guanciale, bucatini and pecorino romano. As OG Roman as you can get. Most restaurants use one or two of these, but never all 3. Immediately reminds me of my time in Rome.

    2. Tamarind roasted pork. A traditional dish in my culture. Grew up on it. Got fat off it. Reminds me of all the family I grew up with, some still here, most passed away.

    3. Bonus item (dessert) – Bomb pop (or Superstar) fudge & banana ice cream. Childhood FAVORITE. Ugh, none of the ice cream trucks I’ve come across carry it anymore.

    My best female friend make a great banana cake, I could eat the entire thing by myself. I trade it for my homemade cookies that she love, so everybody win.

    Chicken Balti Pies – quite a simple recipe, really, but absolutely bursting with flavour.

    On a COLD snowy day, a hot tuna casserole with potato chip crumble topping and cheese. If my wife makes this for dinner after a day of skiing I will do the dishes SO FAST.

    A regional variation on scrapple. It was poor farmer food designed to use up the parts of a pig that couldn’t be easily sold, but surprisingly tasty.

    Our local butcher makes awesome chicken kebabs that we take home, pop on a fire, toss homemade garlic potatoes and butternut in tinfoil on the coals. We like that.
