In my bank I simply opened subaccounts in euros and dollars. I need those for traveling. I did it in app in 5 seconds, did not cost anything additionally.
have a look at wise (transferwise) you get to either keep the money as cash, invested in a government bond fund (2-4.5%) or in a stock fund (12%). Obviously with this being funds there is a chance of some money loss.

That seems like a question for a specific country. Not all of Europe
TradeRepublic offers the ECB’s interest rates (2.25% at the moment).
